Air Fryer Latkes

Description

Crispy, golden brown on the outside and soft on the inside. These moreish, grease-free air fryer latkes can be served either as a starter (4 large latkes) or smaller (8-9) canapés.


Ingredients

  • 450g Potatoes
  • 1/2 Onion
  • 2 tsp Flaked sea salt
  • Pinch of fresh black pepper
  • 1 Egg
  • 30g Butter
  • 15g / 1/4 cup Panko breadcrumbs
  • 1/4 tsp Baking powder

Instructions

  1. Peel the potatoes and onion, then grate roughly on a box grater.
  2. Toss the onions and potatoes with 1 tsp salt and set aside for 2 minutes. Place the mixture in a clean cloth, then twist the ends together, and squeeze out the excess liquid into a bowl.
  3. Reserve the potato liquid, and allow it to settle for 5 minutes, then drain off and discard the watery top layer to reveal the starchy paste at the bottom. Reserve this for later.
  4. Add the squeezed potatoes and onions, panko, egg, butter, starchy potato liquid, and baking powder to a bowl. Mix everything until combined
  5. Form the latkes into balls, you can either make 4 larger ones or 8-9 smaller canapé sized ones. Using the flats of your hands squish the latke balls until 1cm thick, allowing the balls to smash and form scraggly edges. The scraggly imperfect edges will cook up deliciously crisp so don’t tidy them up!
  6. Oil the grate of your air fryer, then slide the latkes into the basket. Spritz with oil, then air fry at 190C for 14-18 minutes. Flip half way and spritz with more oil. Cook until a deep golden brown. All air fryers will run slightly differently, so you may need more or less time to achieve a perfectly crispy result in your model.
  7. Once cooked to a deep golden brown sprinkle over more salt if necessary.
  8. Serve immediately with your favourite toppings. We suggest sour cream and chives, applesauce and sour cream, or our delicious gin and tonic cured salmon (full recipe here).
