BLT sandwiches are quick, easy and deliciously satisfying. Here’s my updated take on a much loved classic – the Triple BLT with an elevated flavour profile, that’s ready in under 15 minutes.
So if you’re looking for a quick and easy lunch, reach for some readily available ingredients in addition to the usual bacon, lettuce, and tomato – and make some sandwich magic!
Ingredients
- 1–2 large tomatoes
- 8 slices thick-cut bacon
- 1 teaspoon red wine vinegar
- Flaky sea salt
- Freshly ground black pepper
- 4 slices good bread
- 5g freshly picked basil
- 1 tablespoon mayonnaise
- 1 tablespoon olive oil
- 1 Tbsp Sriracha Sauce
Instructions
- Slice the tomatoes, season lightly with salt and black pepper, then drizzle over olive oil and red wine vinegar and set aside to marinate.
- To make the ultimate crispy, golden glazed bacon, use your air fryer. Layer each rasher into the basket, brush with a tablespoon of Sriracha and cook in your air fryer at 190 C for 3 minutes each side, no preheating necessary. Alternatively, pan fry or bake in the oven until the bacon is crispy. If opting to pan fry, you can brush the bacon with Sriracha sauce at the end.
- Slice the bread and pop in the toaster. Once it’s toasted to your liking, brush each side with olive oil and return to the toaster until golden brown. Alternatively, brush both sides with olive oil and pan fry for extra crunch.
- To construct your sandwich, start by smearing a generous layer of Boursin onto one slice of the toasted bread; top that with half your marinated tomatoes, half the bacon and a half the basil leaves. On the other piece, smear with a layer of mayo, top with lettuce and close the sandwich.
Repeat this step to create the second sandwich.
