Broccoli & Crispy Grain Salad

Description

This crunchy, warming, winter Broccoli & Crispy Grain Salad is high in protein and vegan adaptable – perfect for Veganuary! Paired with a zesty dressing, roasted Brussels sprouts, and sweet, dried cranberries.


Ingredients

Units
  • Half a red onion, diced
  • 1 small whole broccoli (325g roughly)
  • 200g Brussels sprouts*
  • Zest and juice of a lemon
  • 1 tsp Honey
  • 1/2 cup (120g) Yogurt or vegan alternative
  • 3 Tbsp (40g) Mayonaise or vegan alternative
  • 1/2 cup Cooked pearl barley*
  • 1/4 cup (20g) Toasted sliced almonds
  • 1/3 cup Dried cranberries
  • Oil, salt, and pepper as needed *See FAQs for substitutions

Instructions

  1. Cut the head of broccoli in half, then finely chop or grate the florets and stem. Set the broccoli aside for later. Finely dice the red onion.
  2. Thinly slice the Brussels sprouts, through the root, roughly 1mm thick.
  3. Place the sliced sprouts on a baking sheet, or in the basket of your air fryer. Toss with oil, and salt and pepper to taste. On another baking sheet, or in the other half of your air fryer, add the cooked barley. Toss the barley with a little oil, and season with salt and pepper. Air fry the barley and sprouts at 190°C for 3-5 mins, or in the oven on the convection setting at 200°C for 7-10 mins, until golden brown and crisp. Add more time as necessary to achieve a golden brown result
  4. To a large bowl, big enough to toss your salad, add the diced onion along with the lemon zest, juice, and honey. Season with a pinch of salt and pepper to taste. Add the yoghurt and mayo, stir and taste again for seasoning. The dressing should be zesty and lemony, with a good smack of pepper. Add a little more lemon juice if necessary.
  5. Remove the sprouts and crispy barley from the air fryer/oven.
  6. To the yoghurt dressing add the finely chopped broccoli, crispy sprouts and barley, dried cranberries, and flaked almonds.
  7. Toss the salad, season to taste with salt and pepper, and then serve immediately.
