Ultimate Crispy Chicken Dinner

Description

Who doesn’t adore super crispy chicken for dinner? Throw in some honey, Za’atar and fennel slaw, and you’ve got a match made in culinary (cartel) heaven! View the cook-along video here,


Ingredients

Units
  • 2 free-range skinless chicken breasts
  • 1 tsp garlic powder
  • 1 tsp paprika
  • panko breadcrumbs
  • 1 egg
  • 1/2 cup of flour
  • 2 medium fennel bulbs
  • 2g mint
  • lemon juice from 1 small lemon

To Serve 

  • 1 tsp honey
  • 1/2 tsp zaatar

Instructions

  1. Place the chicken on a chopping board. Using a knife split the chicken most of the way through to butterfly it. See your helpful video here.
  2. Sprinkle the garlic powder, paprika and salt all over the chicken.
  3. Add flour to a shallow dish and season with a pinch of salt and pepper.
  4. Add the egg to a shallow dish and whisk up with a splash of water.
  5. Add the panko to another shallow dish.
  6. Dip the butterflied chicken into the flour and coat thoroughly. Next add the chicken into the beaten egg, turning to coat it well in egg. Finally add the chicken to the panko breadcrumbs, pressing the crumbs into the chicken to secure the coating.
  7. Place a pan on medium heat and drizzle in enough oil to cover the bottom of the pan in a 1mm layer. Once the oil is hot, add the chicken.
  8. Shallow fry for 3 mins per side until golden and crispy. Remove and let rest on a wire rack.
  9. Slice the fennel bulb as thinly as possible (alternatively use a mandolin). Toss the fennel, lemon juice and a finely chopped mint together. Season the fennel salad with salt and pepper to taste.
  10. Plate up the chicken with the fennel salad alongside. To finish lightly drizzle the chicken in honey, and sprinkle over the zaatar.
  11. Serve immediately
