Description
Citrusy, warming, creamy and crunchy, this baked grapefruit breakfast crumble is sunshiney deliciousness on a plate.
Ingredients
- 1 Sweet Sunrise Grapefruit, cut in half
- 1/4 cup rolled oats
- 1 Tbsp coconut oil or a light olive oil
- 1 tsp maple syrup (this can be replaced with honey)
- Salt
To Serve (optional)
- Coconut yoghurt or coconut cream
Instructions
- Split your grapefruit in half down the middle.
- Mix together the oats, coconut oil, sweetener and vanilla.
- Rub everything together until well incorporated, then add a very small pinch of salt to bring out the flavours.
- Spoon the crumble over the grapefruit and bake at 180C for 15 minutes, or until the crumble has crisped and the grapefruit is jammy and soft. Alternativly pop the grapefruit in your airfryer, on 160C for 6-8 Minutes. The time here will depend on your brand of air fryer.
- Serve immediately with a spoon of coconut yoghurt.
Notes
Chefs Tip: If you can’t be bothered to put the oven on in the morning to make these fresh, make the crumble spread in one layer on a baking paper-lined tray. Once lightly brown and crisp, pop the ready-made crumble in an airtight container to use throughout the week. You can bake all the crumble free grapefruit for the week and warm them as needed. Simple top the reheated grapefruit with crumble and you’re good to go.
