Description

Ready in just 35 minutes, this blondies recipe will help you create chewy, buttery blondies packed with chocolate chips and pistachios.


Ingredients

  • 125g unsalted butter
  • 2 eggs
  • 100g light brown sugar
  • 50g white sugar
  • 1 tsp vanilla
  • 50g Pistachios chopped
  • 135g plain flour
  • 1/2 tsp baking powder
  • 1/2 tsp fine sea salt
  • 50g white chocolate, roughly chopped

  1. Butter a 24 x 18 cm baking tin and line with parchment paper. Gently melt the butter in a small, heavy-bottomed pan and set aside to cool slightly.
  2. Chop the pistachios, for texture I like to chop some very finely, and the others more chunky.
  3. Preheat your oven or air fryer as directed below.
  4. Whisk the eggs one at a time into the cooled melted butter, then add in the sugar and vanilla and whisk vigorously for 2-3 minutes until pale and fluffy.
  5. Add the pistachios, flour, baking powder, salt and white chocolate, then fold the mixture together with a silicon spatula, until just combined with no streaks of flour remaining. Don’t overmix.
  6. Tip the batter into your prepared baking tin, and place it into your preheated oven or air fryer.
  7. Air fryer: Preheat your air fryer to 145C and set the timer for 25-30 minutes
  8. Oven: Preheat your oven to 160C and bake for 25 minutes
  9. Bake until just set, but still gooey adjusting the time slightly to achieve a perfectly gooey result.
  10. Remove the blondies from the oven/air fryer and allow to cool completely.
  11. Turn the blondies out onto a board and cut them into squares. The blondies will keep for 5-7 days in an air-tight container.
  12. (I love eating these straight from the fridge where they get deliciously chewy and cold!)

 

Notes

This recipe can easily be doubled.

Oven: Simply add the batter to a larger baking sheet, allowing the batter to sit about 2cm deep. Adjust the cooking time as necessary. By a few minutes. The batter should be set, not liquid, but gooey.

Air fryer: Baking powder activates once your wet and dry ingredients are mixed. For this reason, it is better to make 2 separate mixes if you want to bake a double batch in your air fryer. Get the first batter to bake, and make the second when the bake time has 10 minutes to go.
