Description

With only 9 ingredients, this one-pot cheesy beans and greens casserole can be made in under 35 minutes.


Ingredients

Units
  • 200g kale, stems and leaves
  • 250 ml vegetable stock
  • 1 large leek
  • 2 cans white beans, drained and rinsed
  • 150g jarred artichoke hearts (or substitute for your preferred filling)
  • 4 Tbsp/60g creme fraiche
  • 3 cloves garlic
  • 1 ball mozzarella or a handful of melty cheese of choice
  • 15g parmesan (optional)

Instructions

  1. Rinse the kale, then remove the stems from the leaves. Finely chop the kale stems and roughly chop the leaves.
  2. Place an oven-safe casserole over a medium heat, add a drizzle of oil, and then, once hot, add the kale stems.
  3. Sautee the stems until they begin to soften. Add in the leaves and half the stock and cook until wilted.
  4. Remove the kale and liquid from the dish and add to a blender. Blend until a fine puree. Set aside
  5. Thinly slice leeks and add to the casserole dish, cook over a medium heat until they are soft. Grate in the garlic and cook for 2 more minutes.
  6. Add in the beans, remaining vegetable stock, pureed kale, and creme fraiche. Season well to taste.
  7. Half your artichoke hearts or cut your alternative filling into bitesize pieces. The beans should be glossy and saucy at this stage. Add a little more stock or water if necessary to achieve your desired consistency.
  8. Tear up a ball of fresh mozzarella, and evenly distribute it over the beans and greens, followed by a sprinkle of parmesan.
  9. Place under the grill at 200C for 10-15 minutes until the cheese is bubbly and golden brown.
  10. Serve immediately and enjoy.
    Serving suggestion: This dish is a wonderful and complete one-pot meal, but if you want to add a side, a bright tangy salad would pair well with this dish or add some crusty garlic bread to swipe through the sauce.
