Description

This really simple Sticky Chicken Sausage Tray Bake is a one-pan recipe guaranteed to satisfy the whole family. This hearty recipe features a touch of chipotle heat and some pineapple zing for a spicy sweet and sour-contrast. Finish it off with fragrant fresh coriander to create a deliciously balanced dish.


Ingredients

Units
  • 8 Chicken Bangers (roughly 400g pack)
  • 270g Pineapple slices, cut into chunks
  • 125ml/ 1/2 cup pineapple juice
  • 1/4 cup vegetable or chicken stock
  • 1 pack/220g sweet mini peppers, halved and deseeded
  • 2 red onions, cut into eighths
  • 2 Tbsp chipotle paste
  • 2 garlic cloves, grated
  • Coriander to serve
  • 12 tsp corn flour (optional – for thickening sauce, see note)

Instructions

  1. Prepare your ingredients as directed above
  2. Add the drained pineapple (reserve the juice), halved sweet peppers, chunks of red onion, chipotle and garlic to a bowl. Add a drizzle of oil, and salt and pepper to taste then toss to combine until the chipotle paste covers all your vegetables.
  3. Remove the grill tray from the air fryer basket. Tip the veg and pineapple into the air fryer basket, pour over the stock and pineapple juice, then select the air fry setting. Set the temperature to 170C, and the time to 15 minutes. There is no need to preheat.
    Note: This recipe was created and tested in the Instant Vortex Clear Cook. You may need to adjust the cooking time slightly for your model at home.
  4. Toss the vegetables once if you notice them turning a little brown during the cook time.
  5. Open the air fryer basket and add the sausages on top of the partially roasted vegetables. Brush the sausages with a little oil. Push the basket back into the air fryer, then cook at 190C for 10-15 minutes, until the sausages are browned and cooked through.
  6. Once cooked spoon the sticky sausage traybake onto serving plates, and drizzle over a little of the sweet sauce.
  7. Plate up with some rice, sweet potato mash, or your favourite side for serving. Serve immediately.

Notes

*Chefs tip: for a thicker “sticky sauce”, mix your cornflour with just enough cold water to form a loose paste. Drizzle this over the veg and stir with a plastic spatula until combined. Add the sausages and proceed as directed. The cornflour will thicken the sauce as the sausages cook.
