Instructions
- Prepare the rhubarb, rinse the stalks, trim the ends and cut into approximately 3 inch/8cm pieces. In a shallow dish, add the rhubarb and sprinkle over the sugar. Ensure the pieces are coated and laid out in a single layer in a snug baking dish. Add 1tsbp water
- Air Fry: Cover with foil and air fry at 170C for 11-17 minutes. Baking will take a little more or less time, depending on the dish used, and the thickness of the rhubarb. I find metal sheet pans are best for the air fryer as they conduct heat better an ceramic roasting dishes.
Alternatively, use the oven: Preheat the oven to 185C. Cover the rhubarb with foil and bake for 11-17 mins. Baking will take a little more or less time, depending on the dish used, and the thickness of the rhubarb. - Once cooked, the rhubarb should hold its shape, be bright pink, and be easily pierced with a fork. The sugar will have melted into a pink sticky syrup.
- Serve your roasted rhubarb on your favourite yoghurt for breakfast, with custard.
