Description
Georgian Cheese Bread or Khachapuri is a beloved staple of Georgian cuisine with its distinctive boat-shaped crust oozing with cheese and topped with an egg. This recipe is the cheat’s version which is easy to make, low on ingredients – and can be ready in less than 30 minutes!

For the Dough
- 170g self-raising flour
- 170g full fat strained Greek style yoghurt (we used Fage)
- 3g salt
- 1 egg for the wash
For the Filling
- 200g aged cheddar or mozzarella cheese
- 125g ricotta
- 2 egg yolks
- 2g chopped parsley
- Knob of butter
- Oil, salt and pepper as needed
- Baking parchment
Instructions
- Preheat the oven to 200°C fan and place a cast iron pan or pizza stone in the oven to heat up.
- In a mixing bowl, combine the self-raising flour, yoghurt and salt to form a dough. You want the dough to form into a ball and not stick to the sides. Add more flour if need be and then let rest for 5 minutes.
- Mix the ricotta and mozzarella or aged cheddar cheese together and season to taste with salt and pepper
- Divide the dough into 2 equal pieces, and then liberally flour a work surface. Pull the dough’s edges into the middle, rolling the dough over itself, folding and twisting the ends to form a boat shape.
- Transfer the dough onto a piece of baking parchment. Repeat the process with the other dough ball, transferring it onto its own piece of parchment.
- Divide the cheese mixture between the two shaped pieces of dough, spreading it out until it reaches the raised edges of the dough.
- Whisk the whole egg then brush it along the sides of the dough.
- Transfer the cheese-stuffed dough boats onto the hot cast iron pan or pizza stone, then quickly transfer it into the oven. Depending on the size of your pizza stone, or cast iron pan, you may need to cook the cheat’s khachapuri in two batches.
- Bake until golden brown and cooked through, with a golden brown bubbling cheese centre. About 15 – 20 mins.
- Once cooked, pull the cheat’s khachapuri from the oven and onto a serving plate. Make a nest in some of the bubbling cheese and drop in an egg yolk. Finish the khachapuri with a knob of butter and fresh parsley.
- When ready to eat, mix the butter and egg yolk through the bubbling hot cheese and enjoy!
