Description

These Greek-style lemon potatoes are golden, fluffy, and absolutely loaded with flavour. Cooked in a flavourful lemon, garlic and herb broth, they are the perfect accompaniment to your favourite Greek dishes. 


Ingredients

Units
  • 5 large potatoes (800g)
  • 1/4 cup olive oil
  • 200ml stock
  • 40ml lemon juice and zest
  • a whole head of garlic
  • 1 tsp of Greek oregano (or regular)
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 190 degrees C.
  2. Peel and cut the potatoes into chunky wedges. Place them into a roasting pan with the oil, stock, lemon, 1 tsp salt and a generous pinch of black pepper.
  3. Trim the top off of the garlic head to expose the cloves, add to the pan alongside the potatoes.
  4. Roast at 190 degrees C for 25 mins, turning the potatoes and garlic (cook clove side down). Add the oregano and roast for a further 20 mins at 200 degrees C, or until the potatoes are golden.
  5. Squeeze out the garlic from its skin and toss it through the potatoes. Serve immediately
