Description
Avgolemono is a Greek delight that marries the zesty essence of lemon with the comforting warmth of chicken soup.
Ingredients
Units
- 1.2 litres chicken stock
- 1 onion, finely chopped
- 2/3 cup (200g) long-grain rice
- 2 cups shredded cooked chicken (leftover roasted chicken works great)
- 1 bay leaf
- 2 large cloves garlic, minced
- 2 eggs
- 1 lemon (zested and juiced)
- Small handful (5g) fresh parsley, plus extra for garnish
- Small handful (5g) fresh dill
- Olive oil, for sautéing and olive topper
- Salt and pepper to taste
Olive topper
- 80g green pitted olives, roughly diced
- 3 tablespoons (45ml) olive oil
- Small handful of parsley, finely chopped
Instructions
- In a large pot, drizzle in a little olive oil, then sauté finely chopped onion, lemon zest, and minced garlic until softened.
- Pour most of the chicken stock into the pot with sautéed aromatics, reserving about 60ml for later to blend the herbs. Add a bay leaf and bring it to a simmer. Stir in 2/3 cup (200g) of long-grain rice and cook until al dente.
- While the rice is cooking, prepare the olive topper. In a small bowl, mix roughly diced green olives, finely chopped parsley, and olive oil. Set aside.
- In a bowl, whisk the egg whites until soft peaks form. Whisk in the egg yolks and lemon juice. Slowly temper the egg mixture by whisking in hot stock from the pot. Be sure to whisk continuously to avoid curdling.
- Gradually whisk the tempered egg mixture back into the soup pot. Cook on low heat for about 2 minutes until the soup thickens slightly.
- In a blender, combine a small handful of fresh parsley, a small handful of fresh dill, and the reserved cooled chicken stock. Blend until smooth.
- Whisk the blended herb mixture into the soup. This will give the soup a bright green colour. Season with salt and pepper to taste.
- Spoon the soup into bowls, add the warm cooked chicken, and drizzle with the prepared olive topper.
- Garnish with additional chopped parsley if desired. Enjoy your unique and flavorful green Avgolemono soup with a delightful olive twist!
