Roasted Cod with Buttery Cherry Tomato Sauce & Greens

Description

This Roasted Cod recipe with a cherry tomato sauce is as easy as it is delicious. It’s a healthy choice that requires just 5 ingredients – and it can be served in less than 20 minutes. An ideal low-fuss choice for a midweek dinner!


Ingredients

Units

In your pantry:

  • 2 Tbsp butter
  • Salt and pepper as needed

5 ingredients:

  • 350g cherry tomatoes
  • 200g broccoli
  • 5g/ 1 Tbsp chopped parsley
  • 2 skinless cod fillets (150-200g each)
  • 1 lemon

Instructions

  1. Place a pan on medium heat, then add 1 Tbsp butter, and a splash of water (about 40ml). Swirl the pan so the butter and water emulsify. Add in the broccoli, season with salt and pepper and cover with a lid to steam for 1-2 minutes or until al dente.
  2. While the broccoli cooks, pat your fish dry with paper towels.
  3. Remove the broccoli and set aside, leaving behind the butter emulsion. Add the tomatoes to the pan. A little of the water will have cooked off, so if you notice the butter mixture is sizzling rather than simmering, add a tiny bit more water as needed.
  4. Cook the tomatoes for 10-12 minutes until blistered.
  5. Preheat your oven or air fryer to 200C.
  6. While the tomatoes are cooking, combine the remaining butter with the chopped parsley, and zest of your lemon. Season your cod with salt and pepper, then smear the herby butter over the fillet. Cook for 7-9 minutes (the time will depend on the size of your fillets), or until cooked through, with the flesh easily flaking when pressed.
  7. Once the tomatoes are jammy and split, and the buttery sauce has combined with the tomato juices and reduced, add the broccoli back in to warm up. Squeeze a little lemon to taste over the tomatoes, sauce and broccoli, then taste and season one last time as needed.
  8. Divide the broccoli between two plates, then slide the fish fillets on top. Spoon over the tomatoes. Combine the pan sauce from the roasted cod, along with your sauce then spoon this over the fish and vegetables.
