Description
It takes less than 20 minutes and 5 ingredients to whip up these spicy, saucy, and speedy Sri Racha mussels. Sustainable, easy to cook and relatively cheap, mussels are a brilliant entertaining option.

- 2 slices bread
- 800g -1kg mussels
- 30g butter
- 30g sri racha
- 8g parsley chopped
- Cooking oil, salt and pepper as needed
Instructions
- Start by prepping the mussels. If the “beard” is not removed from the mussels then pull the threads to remove them. Some can be quite tough but just wiggle the threads back and forth until they detach. Press together the shells of any mussels that are open. If the shell doesn’t start to close, the mussel is dead and should be discarded.
- Place a large stainless or carbon steel frying pan or pot on high heat (the mussels will scratch non-stick pans).
- While the pan heats up toast your bread, then place it into the bottom of two serving dishes/bowls with a lip to contain the pan sauce from the mussels.
- Once the pan is screaming hot, add a drizzle of cooking oil, then add the mussels and cook until they start to open. Stir occasionally.
- Once the mussels are open and cooked (this should only take a few minutes), lower the heat, then add the sri racha and the butter. Stir to coat the mussels in the buttery sri racha.
- Once the mussels are well coated, spoon them on top of the piece of toast and top with chopped parsley. Serve immediately.
