Description

Delightfully salty, sweet and creamy, this moreish whipped feta spread is studded with dates and pistachios, and would make the perfect accompaniment to any meze or Mediterranean-themed feast.

Ingredients

Units
  • 200g feta
  • 1/2 cup yoghurt 80g
  • ground pepper to taste
  • 50g dates – sliced in half length ways
  • zest of lemon
  • 10g pistachios
  • 1.5 Tbsp olive oil

Instructions

  1. Add the feta, lemon zest, yoghurt and pepper to the food processor and blend together – you will need to scrape the sides down every now and again.
  2. Once blended and smooth, add the oil in slowly with the motor still running.
  3. Add oil to a frying pan and add the dates. Cook on medium-high heat until the dates begin to soften.
  4. Roughly chop the pistachios. Scatter the dates and pistachios over the feta and serve with flatbreads or pita.
