Elevate the humble baked potato with this crispy, air fryer twice-baked potato recipe. You will need only 6 pantry ingredients and 1 hour to create this delicious treat in your air fryer.
Firstly we bake whole potatoes until soft on the inside and crunchy on the outside. Next cut the tops off your potatoes and scoop out the fluffy interior, leaving just the crispy skin behind. By removing the skin and cooking it on its own in the air fryer for a few minutes, you will create a crunchy, golden-brown shell. Finally, whip up a herby mash, fill the crispy shells with sticky caramelized onions, and grill your twice-baked potatoes until nice and gooey. Now that’s a mid-week comfort meal.

Description
The baked potato reinvented; these air fryer twice-baked potatoes are fluffy on the inside and crispy on the outside. Enjoy as a tasty potato side, or a main with a fresh, green salad. This moreish, versatile recipe will become your new go-to.
Ingredients
- 3–4 Potatoes
- 100g Cheddar cheese or vegan alternative
- 2 Onions
- 50g Butter or vegan butter alternative
- 2g / 1 Tbsp Fresh Chives
- Salt, pepper and olive oil
- Vegan oat cream or dairy sour cream
Instructions
- Place your potatoes in the air fryer basket, and brush with oil and a pinch of salt on both sides. You can use your hands to ensure the oil is evenly coated.
- Cook in the air fryer at 200°C for 30-40 minutes, depending on the size of the potato. You will know when your potato is cooked through when it is easily pierced with a knife.
- While the potatoes are cooking, thinly slice both onions and add to a medium-sized pot with a dash of olive oil. Cook slowly on low heat so the onions caramelise until soft and golden brown.
- Cut the top 1/4 of the potatoes. Scrape out the fluffy insides, being careful not to break through the crispy shell. Set the skins aside and place the fluffy potato insides into a bowl.
- Place the hollowed-out skins into the air fryer, brush with a little olive oil and cook for 8-10 minutes at 190°C until golden and crispy. You can also add the potato tops to the basket and enjoy it as a crispy chef’s snack.
- To the potato in the bowl, add the butter, chives, one-third of the cheese and cream. Mash the potatoes until smooth and fluffy. The amount of cream can vary depending on the size of the potato, use as much as necessary to make a smooth and fluffy mash.
- Season the mash with salt and pepper to taste
- Once the skins are ready, divide the caramelized onions between your crispy potato skins. Scatter another third of your cheese over the caramelized onions.
- Finally, add the mash to your potato skins. I like to overfill them so they look abundant and heaping. Scatter the remaining cheese over the mash then pop the potatoes back into the air fryer at 190°C for 2-3 minutes or until the cheese is gooey.
- Serve immediately as a side dish or make it a comforting mid-week meal by adding a side salad.
