To make this recipe, all you’ll need are some baby potatoes, bacon, herbs and butter. Pop the cooked bacon, soft butter, lemon and herbs with the honey into a food processor to create your butter. Description
These bacon and herb butter potatoes are the perfect side dish and go with almost anything. Serve them with steak, fish, or even at breakfast with soft poached eggs!
Ingredients
- 1kg baby potatoes
For the butter
- 110g Salted butter
- 10g Parsley
- 1/2 tsp Honey
- 1 tsp white miso (optional)
- 3 Garlic cloves, roughly chopped
- 50g Bacon lardons
- 1 Lemon, zest and juice
Instructions
- Ensure the butter is out of the fridge and is room temperature.
- Boil the potatoes. Once they are soft or easily pierced place them into the air fryer or onto an oven tray and roast until golden and crispy. When using an air fryer, fry for 40 minutes at 170°C or until crispy. Otherwise, roast them in the oven for 45-50 minutes at 180°C.
- Add your bacon to a pan and fry over a medium to low heat to render out the fat. No need to add oil. If you have strips of bacon rather than lardons, cut into small chunks.
- Once the bacon is crispy, add the garlic and fry on a low heat for 2 minutes.
- While the bacon cooks, zest the lemon and set the zest aside.
- Turn the heat off and squeeze the lemon juice into the pan to deglaze it.
- Add the bacon, lemon juice, zest, miso and garlic to a mini food processor along with the herbs and honey. Ensure the herbs are fine and combined. Add the room-temperature butter and blend to make your bacon and herb butter.
- Once the potatoes are ready and crispy, add them to a medium sized pan, add the bacon and herb butter and toss through. This can also be done in the roasting tray.
- Finish with fresh chopped parsley and serve nice and hot!
