Description

Dessert for breakfast… Have I got your attention? Read on, big (and little) kids! This banana cream pie chia pudding is everything you’re going to want! 


Ingredients

Units
  • 1 cup coconut milk
  • 1 pinch cinnamon
  • 1/4 teaspoon vanilla
  • 3 Tbsp chia seeds
  • 1/2 a banana, thinly sliced
  • 2 tsp honey
  • A small handful of toasted coconut shavings

Instructions

Optional: Before starting, open your coconut milk and skim off a little of the solidified coconut cream. Set this aside in the fridge

  1. Mix together the coconut milk, cinnamon, vanilla, chia and honey and allow to sit in the fridge overnight.
  2. Fill a small mason jar with sliced banana and spoon over the set chia pudding.
  3. Add some of the reserved coconut cream for that extra indulgence and scatter over the coconut flakes.
