Breezy Berry Galettes With Elderflower

With a short, crispy crumb topped by a delicious, oozy berry filling, these galettes make for a perfect winter or autumn treat!

These little berry galettes are heavily in rotation in my kitchen of late. You might also know them as crostata or hand pies. All you really need to know is that they are super easy to make.

They come together very quickly and utilise minimal ingredients. The sour cream pastry always comes out well, even for pastry novices, thanks to the magic of the sour cream in the dough. The result is a short, melt-in-your-mouth, buttery crumb, cradling elderflower perfumed berries.

Frequently Asked Questions

Can I make this without the elderflower cordial?

Absolutely! Simply substitute the elderflower cordial out for the same quantity of rosewater or an additional two tablespoons of sugar. 

Can I make this using different fruit for the filling?

Feel free to experiment using different fruits, berries or combinations thereof! Stone fruits and berries make a delicious combination – use your imagination!

With a short, crispy crumb topped by a delicious, oozy berry filling, these galettes make for a perfect winter or autumn treat!


Ingredients

Units
  • 125ml sour cream
  • 260g plain flour
  • 200g cold salted butter, cubed
  • 2 Tbsp coconut/regular sugar
  • 350g assorted berries
  • 2 Tbsp cornflour
  • 3 Tbsp elderflower cordial/rosewater OR 2 Tbsp sugar
  • 2 Tbsp milk

Instructions

  1. Squish/rub the cold butter into the flour.
  2. Add the sour cream and mix with your hands until it just comes together. Place the dough in a Tupperware in the fridge for 15 mins.
  3. Heat the oven to 200C.

Make the filling

Halve or quarter any larger berries like strawberries. Add the berries to a bowl with elderflower cordial and cornflour. Gently mix together.

Assembly

  1. Flour your work surface with 3 Tbsp or so of flour to prevent the dough from sticking to the surface.
  2. Divide the dough into 4 balls. Roll one dough ball out 0,5cm until thick.
  3. Add 1/4 of the berry filling to the centre, leaving a 3 cm border of pastry all the way around. Fold the edges in and around the filling to enclose it.
  4. Brush the pastry with milk, and scatter over the coconut or white sugar.
  5. Repeat the process then place the galettes on a baking paper-lined tray.
  6. Bake for 15-20 minutes or until the pastry is golden brown and cooked.
