Description

These birthday cake pancakes are everything you could ever wish for in a breakfast dish – soft, fluffy, and stacked high with festive sprinkles. Best of all, they’re incredibly easy to make and can be stacked in just six simple steps.

Ingredients

Units
  • 1 1/2 Tbsp vinegar
  • 1 cups milk
  • 1 1/2 cups cake/AP flour
  • 1 Tbsp baking powder
  • 1/4 tsp salt
  • 2 Tbsp white sugar
  • 1 egg
  • 3 Tbsp butter, melted
  • 3 Tbsp sprinkles
  • 1 Tsp vanilla

To finish

  • Whipped cream
  • Sprinkles
  • Candles/sparkler

Instructions

  1. Mix the milk and vinegar together. Allow the vinegar to curdle the milk.
  2. Sift the flour into a bowl, then add the baking powder, salt and sugar. Mix together.
  3. Make a well in the dry ingredients, then add the milk mix, melted butter, vanilla and egg. Mix until just combined.
  4. Fold in the sprinkles.
  5. Ladle into a buttered pan on medium heat, and cook until bubbles form on the surface and the pancake is golden on the bottom
Chefs tip: use an egg ring, or metal biscuits cutter to cook your pancakes into perfectly even circles.
Flip and finish cooking on the other side. Repeat until the batter is finished
  6. Stack up with cream and sprinkles. Finish with a candle or sparkler.

Notes

Chef’s tip: use greased cookie cutters, or fried egg rings to achieve the perfect fat-round pancakes
