Leftovers never looked this good! Keep the Christmas cheer going by using your Christmas Day leftovers in this easy Boxing Day bagel recipe.


Ingredients

Units

Per bagel:

  • 1 Egg
  • 20g Melting Cheese (cheddar, gruyere, mozzarella, gouda- whatever you have)
  • 10g / Handful rocket
  • 2 tbsp Cream cheese
  • 1 tsp Chilli sauce (optional)
  • Sliced turkey
  • Leftover roast veg or potatoes
  • Leftover stuffing

Instructions

  1. Form the stuffing into a patty the size of your bagel, and place it into the air fryer basket.
  2. Set the air fryer to preheat at 165°C for 6 minutes and press start to begin crisping the stuffing.
  3. Slice the bagel in half. Cut a square of baking paper just big enough for the bagel to sit on. Place the top half of the bagel cut side down on the baking paper.
  4. Add a small amount of your cheese into the bagel hole. Crack the egg, and slip the yolk and some of the white into the hole too. Top with more cheese – The cheese will protect the egg yolk, keeping it nice and gooey while cooking
  5. Manoeuvre the bagel and baking paper into the air fryer basket. (See notes below)
  6. Close the air fryer basket to start the cook, ensuring the egg cooks for 6 minutes for a soft yolk, and longer for a more set yolk.
  7. Assemble the rest of your bagel. Add chilli sauce to your cream cheese (if using), and spread this onto the bottom half of the bagel. Top with stuffing and sliced turkey, then place into the air fryer to warm up for the last 2 minutes.
  8. Once cooked, remove the bagel halves and add a handful of rocket on top of the stuffing and turkey. Peel off the baking paper from the eggy top and slide this on top of the rocket half. Serve immediately and enjoy!

Notes

Safety warning: Loose baking paper in your air fryer is a fire hazard. Use a small square and ensure its weighted down by your bagel.
