Spice up your breakfast with Cardamom Coconut French Toast and Rhubarb, a quick and easy recipe that’s both sweet and tangy. Follow these 4 simple steps and enjoy breakfast in a snap!


Ingredients

Units
  • 1 quantity of roasted rhubarb – click here to make your own
  • 4 slices brioche or challah bread
  • 2 eggs
  • 1/2 cup Coconut milk
  • 2 cardamon pods, or pinch ground cardamom
  • 1 tsp caster sugar
  • 10g roasted pistachios, chopped (optional)
  • Knob of butter for cooking
  • Cream, creme fraiche or mascarpone for serving

Instructions

  1. Place the cardamom pods in a pestle and mortar, crack open the pods, release the seeds and grind with the pestle until fine. Alternatively use a pinch of ground cardamom. Mix the cardamon in with the sugar and set aside.
  2. For the french toast, crack two eggs into a shallow bowl along with the coconut milk, ground cardamom seeds and sugar. Whisk well to combine. Dunk the brioche slices into the egg mixture, until well saturated. Then set aside while you heat the frying pan.
  3. Place your frying pan on medium heat. Once hot add the butter and your slices of french toast. Once golden flip and cook on the other side.
  4. Divide the french toast between two plates, and top with roasted rhubarb, cream or yoghurt and pistachios. Serve immediately
