My number one trick for smashing out tasty and wholesome meals in the week is a revolving cast of pantry heroes, salad dressings and flavoured butters. I batch make 1-2 of these flavour bombs on the weekend and add them to salads, grilled meats, grains and vegetables through the week. They quickly elevate simply prepared ingredients, and save me loads of time! 

This 4 ingredient spring onion butter is perfect for using up sad spring onions in the fridge.  It comes together in under 15 minutes and turns everything from soft polenta, eggs, roasted veggies and grilled meats into a  flavour packed star dish. 

Flavoured butters, in particular, are really underrated. They are super simple to make and keep for months in the freezer. The fat content means the light freshness of summer herbs or the earthy, citrus notes of winter are at your disposal year round.

Can I make this vegan?

You absolutely can! Simply substitute the dairy-based butter with your favourite vegan or plant-based butter

What else can I flavour my butter with?

Roasted garlic and caramelised onions make a great savoury addition to flavoured butters. Herbs, citrus zest and spices are all also great to experiment with. 

Serving suggestions for your Spring Onion Butter:

  • Stir it through pasta with mounds of parmesan cheese
  • Stir it through polenta, rice and grains 
  • Pop a spoon of butter over your resting grilled meats for an easy peasy sauce
  • Serve spooned over green veggies, roasted veggies or corn 
  • Spread it over some sourdough toast and serve it with eggs

Description

A salty, spicy and charred spring onion butter… don’t wait, just make it! All you need is spring onions, chilli flakes and butter.


Ingredients

Units
  • 200g soft salted butter
  • half a lemon or lime
  • 5 spring onions
  • 1 Tbsp Chili Flakes

Instructions

  1. Heat a cast-iron or grill pan over high heat. Add the spring onions and cook until nicely charred on all sides. Alternatively, you can grill the spring onions on a BBQ.
  2. Trim the root end off your spring onion and discard it. Roughly chop the spring onion and add it to a small food processor or blender, along with the soft butter, and chilli flakes. Blend until fine.
    If you do not have a blender or food processor, chop the spring onions very finely with the chilli flakes, and stir them into the butter.
  3. To the butter mixture add a little lemon or lime to taste (about 1/4-1/2 tsp) and blend again. Season the butter with a little more salt and pepper if needed
  4. The butter is now ready to use. It can be refrigerated for  a week, or frozen in small portions for us to three months.

Notes

  • I like to pop my butter into cling wrap and roll it into a sausage. I pop this into the fridge to firm up. Once firm I slice the sausage into manageable pieces, roll it back up in the cling film and freeze. This way I can easily take out a medallion of butter when I need one, without hacking at a mass of frozen butter.
