If there was ever a match made in heaven, this comforting gnocchi recipe with chicken and kale would be it! The perfect pairing combines succulent chicken, with pillowy gnocchi, crispy kale and a lush dijon cream sauce in one comforting bite.

This no fuss tray bake of chicken, gnocchi and crispy kale is the easiest and quickest weeknight meal. Finished in a french inspired, dijon cream sauce this family pleasing one pan meal, comes together in under 30 minutes with 9 ingredients

Gnocchi is a great versatile ingredient. It’s easy to make, and it can be boiled or roasted to yield a variety of delicious results in a range of dishes. 

This comforting dish is the perfect dinner all year round, but I love it especially in the colder months. The gnocchi cooks gently in the stock becoming pillowy and soft in the middle, and shatteringly crispy on the outside thanks to the air fryer. The addition of the crispy kale adds a lovely textural contrast, while the chicken keeps things filling without being heavy. A light splash of cream into the pan juices and stock brings all the flavours together to finish the dish.  

You could also make Creamy Chicken and Kale Gnocchi with rotisserie chicken if you are trying to use up your Sunday Roast leftovers on a Monday. Simply leave the raw chicken thighs out of the recipe, then add your rotisserie chicken pieces into the air fryer basket for the final 4 minutes of cooking to warm them up. Serving chicken with this gooey gnocchi mix makes for a comforting, yet and savoury dish – and a sneaky way to get your family to eat their greens!

Description

Ingredients

Units
  • 1 onion, very thinly sliced
  • 4 chicken thighs
  • 3/4 cup Veg stock
  • 50ml double cream
  • 70g kale (remove stems and slice)
  • 500g Gnocchi
  • 2 Tbsp Dijon mustard
  • Two cloves garlic
  • Tsp chilli flakes

 


Instructions

  1. Thinly slice onions. Remove stems from the kale, and cut the leaves into bite-sized pieces. The stems of the kale can be thinly sliced and added in with the onions to cook if you wish.
  2. Take the rack out of the air fryer, and add the thinly sliced onions, crushed garlic, and a sprinkle of chili flakes into the base of the air frying basket. Add the dijon mustard, then pour over the stock and mix everything together.
  3. Add the chicken on top of the stock and onions. Brush the chicken with olive oil, then season with salt and pepper.
  4. Nestle the gnocchi around the chicken, into the stock, then air fry at 195 degrees for 20 minutes, until the chicken is crisp and the gnocchi is golden.
  5. When the time is up, lift out the chicken, and stir in the kale and cream. Ensure the kale is nestled within the liquid, and add the chicken on top of the kale.
  6. Cook for 2-4 minutes more at 185C, until the kale, is wilted, cooked through, and a little bit crispy. Spoon onto plates and serve immediately!
