This no-fuss snack is as easy as popping your filling into puff pastry and turning your air fryer on. All you need is 1 hour and 9 easy-to-find supermarket ingredients, and you’ll be munching down before you can say “Mistletoe!” 

In this recipe we take the classic sausage roll and make it festive. The balance between savoury turkey mince, sweet dried cranberries, and creamy Brie cheese is the perfect way to start your Christmas dinner off with a bang. 

The trick to making this tasty pastry easier to cut before baking is by popping it into the fridge or freezer. This hack will stop the filling squishing out of the pastry ensuring your saugerolls come out perfectly shaped.

Description

These delicious Christmas-inspired sausage rolls make the perfect festive snack. Combine all the familiar flavours of the festive season into one tasty bite.


Ingredients

  • 80g Gourmet instant stuffing mix
  • 80g Water
  • 5g Sage, finely chopped
  • 500g Turkey mince (or replace for pork or chicken mince)
  • 1/2 a round of brie, diced into cubes
  • 40 Cranberries, dried
  • 1 Sheet Puff pastry
  • 1 Egg
  • Splash of milk

Instructions

  1. Place the stuffing mix into a medium-sized bowl, add 80g water, and leave to absorb for 4-5 minutes.
  2. Add turkey mince to the bowl, along with the chopped Brie, sage, cranberries, and half a teaspoon of salt, and combine with a spoon. Set aside for 5 minutes, allowing the stuffing to absorb any excess liquid.
  3. Unroll the pastry into a big rectangle on a floured work surface. Then, using a rolling pin or old wine bottle, roll out the pastry until 2mm thick. Cut the pastry lengthways into 2-3 long, even rectangles, wide enough to enclose your sausage roll filling. Roll the turkey mixture into sausage shapes with your hands and lay along the centre of each rectangle.
  4. Whisk the egg with a splash of milk, then use a pastry brush to brush the egg mix in a thin layer next to the cylinder of turkey meat. This will act as a glue for your pastry layers.
  5. Next, fold one side of the pastry over the turkey filling, onto the egg mixture enclosing the filling inside. Tuck the pastry gently around the filling so its wrapped snugly. Press down with your fingers along the seam to stick the two pieces of pastry together. Cut off any excess pastry, leaving your sausage rolls with a 1cm wide pastry edge. Use a fork along the edge to firmly seal the pastry together.
    Chefs Tip: Place the sausage rolls into the freezer for 8 minutes, or fridge for 15 minutes, to firm up the pastry and make the sausage rolls easier to cut.
  6. Cut the sausage rolls to your desired sized, either bite sized for canapes, or larger. Brush with your remaining egg wash, place into your air fryer and air fry at 175C for 15 minutes, or until cooked through and golden brown. Alternatively, bake at 180C in your oven for 15-20 minutes or until cooked through and golden brown.
  7. Serve with your favourite dipping sauce. We love cranberry sauce, mustard mayo, or aioli!
