Garlicky Tomato Pasta – an excellent amalgamation of three popular Italian ingredients: tomatoes, garlic, and olive oil. Moreover, this simple recipe can be prepared effortlessly in your air fryer. This recipe will instantly become your absolute favourite when you make it The Culinary Cartel way.
In addition to being delicious, this pasta dish comes together in a snap. It’s a quick air fryer, hands off, meal that cooks in just under 40 minutes– perfect for when you need to get an effortless dinner on the table that the whole family will love!
Tomatoes are the spotlight of this dish, so for the best flavour, make sure they’re the highest quality possible. The tomatoes should be crimson, firm and heavy, with no soft spots and thin skin. You can tell if the skin is thin by running your fingers over the surface—it should feel delicate and smooth. Cherry tomatoes are a good option as well.
For this recipe, we are using penne pasta due to its beautiful ridges that cling to all the goodness of that creamy sauce. You can also use any other ridged short pasta or spaghetti if you wish.

Description
During cold winter nights, there’s nothing better than cuddling up with an easy, heart-warming, saucy bowl of pasta. This Creamy Roasted Garlic & Tomato Pasta is the perfect dish to bring warmth to the winter table.
Ingredients
- 500g/ 6 large tomatoes
- 1 garlic bulb
- 1 onion, thinly sliced
- 50ml water
- 60ml olive oil
- 60ml double cream/oat cream
- 200g whole wheat penne pasta
- parmesan/vegan parmesan to serve
Instructions
- Remove the air fryer basket from the air fryer and remove the grill plate from the basket. Scatter the onions into the basket in an even layer. Top the onions with the halved tomatoes. Cut the top ¼ off the garlic bulb, then nestle it cut side down in the air fryer basket and pour over the oil and water.
- Air fry at 190C for 30-40 mins, or until the tomatoes and garlic are blistered, gooey and soft, and the onions are cooked through. If the tomatoes get a little too much colour on one side, flip them over and continue to roast.
- While the sauce roasts, cook the pasta to al dente according to the packet instructions. Drain the pasta, but reserve a little starchy pasta water.
- Add the tomatoes and onions to a blender along with the pan juices, then squeeze the garlic cloves from the skin into the blender jug. Discard the garlic skin.
- Finally, add the cream then blend the sauce until smooth. Stir through a little of the pasta water to get the sauce to the consistency of double cream. Season the sauce with salt and pepper to taste.
- Add the sauce into the pan with the drained pasta, and warm through. Taste again and season. Serve finished with parmesan or your favourite vegan cheese alternative.
Notes
Chef’s tip: You can add carrots and/or roasted peppers to your sauce to add a little more sweetness. If you’re cooking for children, this is also the best way to get them to eat more veggies.
