Description
Welcome to my take on Gigi Hadid’s famous viral spicy pasta alla vodka recipe – this time with udon and gochujang! This udon dish is creamy, spicy, moreish and simply delicious. View the video here.
Ingredients

- 1 onion, diced
- 60g butter
- 3 cloves garlic, minced
- 60g gochujang
- 3 Tbsp vodka
- 120ml stock
- 2 spring onions, finely sliced
- 550g udon noodles
Instructions
- In a large pan over medium-low heat, add a drizzle of oil. Add the onion and cook, stirring frequently, until softened, 4 to 5 minutes.
- Add the butter, gochujang and garlic and cook, stirring frequently, until the paste has coated the onions and garlic and is beginning to darken, about 3-5 minutes.
- Add the vodka to the pot and stir to incorporate, scraping up any browned bits from the bottom of the pot. Turn off the heat.
- Bring a large pot of salted water to a boil and cook the udon until softened, chewy and tender, about 3-8 minutes depending on whether you are using fresh, dried or semi-dried udon noodles.
- Return the sauce to medium heat and add 60ml of the stock, stirring to combine. Turn off the heat and stir in the cooked udon. Add more stock (about a tablespoon at a time) if the sauce is looking dry at this point. Season with salt if needed. Serve topped with the sliced spring onions.
