Welcome to my take on Gigi Hadid’s famous viral spicy pasta alla vodka recipe – this time with udon and gochujang! This udon dish is creamy, spicy, moreish and simply delicious.
Unless you’ve been living under a rock, you’ve probably heard of Gigi Hadid’s viral spicy pasta alla vodka. If not, never fear! We’re bringing you the deliciousness, with a twist of course!
Instead of traditional pasta, my Korean fusion version incorporates bouncy udon noodles and the sweet-spicy-umami flavours of gochujang. Topped generously with chopped spring onions and an optional shake of toasted sesame seeds, this is noodle luxury.
This recipe is oh-so-simple, and requires almost zero effort to pull together something spectacular! All you will need is 8 ingredients and 25 minutes, as easy as that!

Gochujang? What’s that?
Gochujang is, put simply, culinary magic! This fermented Korean red pepper paste is similar to miso, in that it is soybean-based and adds richness, depth of flavour and umami to dishes. However, it also comes with a sweet-spicy bite from beautiful red gochugaru (Korean red pepper) flakes.
What is udon?
Udon noodles are a type of Japanese wheat noodle with a distinctive bouncy, creamy texture. Typically, udon is served as an accompaniment to soups along with a hot broth. They can also be eaten cold with a dipping sauce or stir-fried.
You can typically find udon noodles for sale at your local Asian grocers or market, and they can be fresh, dried or semi-dried.

Description

Ingredients
- 1 onion, diced
- 60g butter
- 3 cloves garlic, minced
- 60g gochujang
- 3 Tbsp vodka
- 120ml stock
- 2 spring onions, finely sliced
- 550g udon noodles
Instructions
- In a large pan over medium-low heat, add a drizzle of oil. Add the onion and cook, stirring frequently, until softened, 4 to 5 minutes.
- Add the butter, gochujang and garlic and cook, stirring frequently, until the paste has coated the onions and garlic and is beginning to darken, about 3-5 minutes.
- Add the vodka to the pot and stir to incorporate, scraping up any browned bits from the bottom of the pot. Turn off the heat.
- Bring a large pot of salted water to a boil and cook the udon until softened, chewy and tender, about 3-8 minutes depending on whether you are using fresh, dried or semi-dried udon noodles.
- Return the sauce to medium heat and add 60ml of the stock, stirring to combine. Turn off the heat and stir in the cooked udon. Add more stock (about a tablespoon at a time) if the sauce is looking dry at this point. Season with salt if needed. Serve topped with the sliced spring onions.
