Description
If you’ve never had marinated tofu or feta before, buckle up! This is one of my favourite quick and flavourful go-to’s, and brings the most delicious saltiness and depth of flavour to my favourite Mediterranean recipes. You can make this using tofu or feta, making this recipe vegan-friendly!
Ingredients

- 200g feta or 280g tofu
- olive oil, 300-600ml
- 1/2 tsp minced garlic, per jar
- 1/2 red onion, finely sliced
- the rind of 1 lemon, roughly sliced (per jar)
- juice of 1/2 lemon, per jar
- bunch of thyme sprigs
- 2 packets of coriander (40g), washed and finely chopped
- a pinch of sea salt flakes
- 1 tsp chilli flakes, per jar
Instructions
- Chop the feta or tofu into even chunks.
- Add the onion, minced garlic, a few sprigs of thyme, chilli flakes, sea salt, lemon rind and feta or tofu chunks, and the coriander into a large pickling jar, mason jar or airtight container.
- Pour in the lemon juice and top up with olive oil until all of the feta/tofu is covered.
- Give a gentle shake, and leave to marinate for a minimum of 3 hours, up to overnight.
- Keep the marinated tofu/feta in an airtight container in the fridge, and eat within a few days (if it lasts that long!)
