Marinated Tofu/Feta
If you’ve never had marinated tofu or feta before, buckle up! This is one of my favourite quick and flavourful go-to’s, and brings the most delicious saltiness and depth of flavour to my favourite Mediterranean recipes. You can make this using tofu or feta, making this recipe vegan-friendly!
Delicious, creamy chunks of feta marinated with olive oil, chilli, garlic and onion. What could be better? This recipe is absolutely delicious served as part of a meze platter or as an appetiser all on its own. Try it in salads, wraps, pitas, the sky is the limit!
This simple and delicious recipe comes together in 5 minutes and needs only 7 basic ingredients! This recipe will make 1-2 jars of marinated tofu or feta, and will last a few days in the fridge – that is if you can control the urge to scoff the whole jar for that long! I am absolutely addicted to this recipe and love it just as much prepared with tofu as with feta.
Make sure to use nice and creamy feta – rather avoid crumbly feta for this recipe, as it is unfortunately too dry and won’t absorb the luscious olive oil and lemon mixture in the same way. For tofu, err on the firmer side, as it will suck up the flavours beautifully.

Ingredients
- 200g feta or 280g tofu
- olive oil, 300-600ml
- 1/2 tsp minced garlic, per jar
- 1/2 red onion, finely sliced
- the rind of 1 lemon, roughly sliced (per jar)
- juice of 1/2 lemon, per jar
- bunch of thyme sprigs
- 2 packets of coriander (40g), washed and finely chopped
- a pinch of sea salt flakes
- 1 tsp chilli flakes, per jar
Instructions
- Chop the feta or tofu into even chunks.
- Add the onion, minced garlic, a few sprigs of thyme, chilli flakes, sea salt, lemon rind and feta or tofu chunks, and the coriander into a large pickling jar, mason jar or airtight container.
- Pour in the lemon juice and top up with olive oil until all of the feta/tofu is covered.
- Give a gentle shake, and leave to marinate for a minimum of 3 hours, up to overnight.
- Keep the marinated tofu/feta in an airtight container in the fridge, and eat within a few days (if it lasts that long!)
