Today, I give you the best rice crispy treats ever! No, really, I mean it! If you’re familiar with Rice Krispie Treats, you know that they can be overpoweringly sweet. These treats do not have that problem – think of them as the grown-up adult version; cool, sophisticated and ready to go to a dinner party.

So, what makes them so special?

  • We’ve added Miso, which amps up the flavour and umami, perfectly balancing the sweetness of the marshmallows.
  • A high marshmallow to rice and butter ratio – these treats are ultra gooey, sticky and have a melt-in-the-mouth soft texture.
  • Brown butter is our secret weapon and star ingredient in this dish,
  • Smooth and caramelly Caramilk chocolate adds richness and smoothness.
  • Finally, flaky sea salt aids in balancing the sweetness,  resulting in the perfect combination of flavours for a treat.

Why use miso?

Miso is an ultra-flavourful ingredient packed with umami. The miso will strongly complement the nutty, toasty, caramelly notes of the chocolate.

Why brown butter?
It’s no secret, I love browning butter. Brown butter is better butter. It’s far from a fussy and overly complicated step. Browning butter is a quick step that transforms the butter into a nutty, complex star of any dish.

I can’t find Caramilk, what can I use?

Feel free to substitute in your favourite smooth chocolate, light, dark or anywhere in between!

What is Caramilk?

Caramilk is a delicious, ultra-smooth caramelised white chocolate bar. 

Is this vegetarian?

Marshmallows are not usually vegetarian, so make sure to find a gelatine-free vegetarian/vegan marshmallow brand. 

Can I make this vegan?

You can indeed! Make sure to use marshmallows that do not contain gelatine or animal products, and use plant-based butter and chocolate in your mixture.

Ingredients

Rice Crispy Treats

  • 120g butter
  • 170g Rice Krispies
  • 400g marshmallows
  • 30g miso

Topping

  • 270g Caramilk Chocolate*
  • flaky salt, e.g. Maldon Sea Salt

Instructions

Optional: For depth of flavour

Heat the oven to 200 C. Place the Rice Krispies on a baking tray and bake until golden brown, about 5 minutes stirring halfway

Rice Krispie Treats

  1. Place the butter into a deep non-stick pan, and cook until the butter turns a golden brown. Add the marshmallows and miso and mix to combine. Fold the toasted Rice Krispies through the marshmallow mix.
  2. Pour the mixture into a medium-sized dish, lined with baking paper and smooth it down with a spatula. Pop the treats in the freezer to set for 5-10 minutes
  3. Once set, melt the Caramilk in the microwave. Cooking it in 30-second bursts and stirring at intervals until completely melted. Pour the mixture over the miso brown butter Rice Krispie treats, sprinkle with a little Maldon flaked salt allow to set
  4. Cut into squares 15 squares and serve immediately. The squares will keep for at least a week in an airtight container and in the freezer for 3 months.

* If Caramilk is not available, sub for dark chocolate.
