Ingredients
- 1 red onion, thinly sliced
- 1 brown onion, thinly sliced
- 2 shallots, thinly sliced
- 1 1/2 TBSP miso
- 2 Tbsp butter
- 50ml water
- 4 cloves garlic, skin on
- 400g labneh
- 1/4 cup mayo
- Handful (about 5g) chives, chopped
- Crudités or crinkle-cut chips, for serving
Instructions
- Preheat your oven to 190°C (375°F).
- In a baking dish, combine the sliced red onion, brown onion, shallots, and unpeeled garlic cloves.
- Heat the butter and water together in the microwave then stir in the miso until it’s well combined, creating a miso-butter mixture. Pour the miso-butter sauce evenly over the sliced onions and whole garlic cloves in the baking dish, ensuring they are well coated.
- Roast the onion mixture in the preheated oven for about 40 minutes or until the onions turn beautifully golden and caramelised. Stir occasionally for even caramelisation, adding a splash more water as you go to stop the miso butter from catching and burning.
- While the onions are roasting, prepare the dip base. In a mixing bowl, combine the labneh, mayo, and most of the chopped chives. Set aside.
- Once the onions and garlic are done roasting, remove them from the oven. Squeeze the roasted garlic from their skins and finely chop it along with the caramelised onions.
- Add the roasted onion-garlic mixture to the prepared dip base in the mixing bowl. Stir until everything is well incorporated.
- Taste the dip and adjust the seasoning with salt and pepper, if needed.
- Garnish the dip with the remaining chopped chives.
