Can I use different types of onions?

The more the merrier! I’m using a mix of red onion, brown onion, and shallots, each bringing its unique flavour to the party. But here’s the thing: you can totally switch it up and use what you have in your kitchen, like all shallots or all brown onions. And just to add a little extra oomph, I’m roasting some garlic right alongside those onions.

Yes, you can prepare the roasted onion-garlic mixture and the dip base separately in advance. Combine them just before serving for the freshest flavour!

The umami bomb in this dip comes from the combination of miso and butter in the sauce, creating a depth of flavour that’s truly extraordinary.

Any tips for caramelising onions without burning the miso butter?

Oven roasted onion dip

Oven Roasted Onion Dip

  • Author: Jess Bunn
  • Total Time: 55 - 60 minutes
  • Yield: Serves 6 - 8

  • 1 red onion, thinly sliced
  • 1 brown onion, thinly sliced
  • 2 shallots, thinly sliced
  • 1 1/2 TBSP miso
  • 2 Tbsp butter
  • 50ml water
  • 4 cloves garlic, skin on
  • 400g labneh
  • 1/4 cup mayo
  • Handful (about 5g) chives, chopped
  • Crudités or crinkle-cut chips, for serving

  1. Preheat your oven to 190°C (375°F).
  2. In a baking dish, combine the sliced red onion, brown onion, shallots, and unpeeled garlic cloves.
  3. Heat the butter and water together in the microwave then stir in the miso until it’s well combined, creating a miso-butter mixture. Pour the miso-butter sauce evenly over the sliced onions and whole garlic cloves in the baking dish, ensuring they are well coated.
  4. Roast the onion mixture in the preheated oven for about 40 minutes or until the onions turn beautifully golden and caramelised. Stir occasionally for even caramelisation, adding a splash more water as you go to stop the miso butter from catching and burning.
  5. While the onions are roasting, prepare the dip base. In a mixing bowl, combine the labneh, mayo, and most of the chopped chives. Set aside.
  6. Once the onions and garlic are done roasting, remove them from the oven. Squeeze the roasted garlic from their skins and finely chop it along with the caramelised onions.
  7. Add the roasted onion-garlic mixture to the prepared dip base in the mixing bowl. Stir until everything is well incorporated.
  8. Taste the dip and adjust the seasoning with salt and pepper, if needed.
  9. Garnish the dip with the remaining chopped chives.
  10. Serve your Miso-Caramelised Onion Dip with an array of fresh crudités or crinkle-cut chips, and watch it disappear at your next gathering.
  11. Enjoy your irresistibly delicious dip with its secret umami-rich flavour bomb!
