Whip up this quick and easy, delectable breakfast that is simply *chefs kiss*… A classic breakfast with a sweet twist, this Panettone Brulée French Toast is the best thing since sliced bread.

  • 2 eggs
  • 60ml milk or cream
  • 1/4 tsp mixed spice
  • 1 shot rum (optional)
  • 1/2 tsp vanilla paste or essence
  • Pinch of salt
  • 6 thick slices panettone
  • Castor sugar for the brulée
  • 2 tbsp butter
  • Cream for serving

  1. Whisk the eggs, milk, mixed spice, rum, vanilla and salt together.
  2. Dip the panettone gently into the mix, being sure not to oversaturate it, and then set aside.
  3. Heat a nonstick frying pan over medium heat then add the butter.
  4. Once the butter foams and melts, slide in the egg soaked panettone.
  5. Cook the french toast on each side until golden brown.
  6. Remove the french toast from the pan.
  7. Sprinkle an even 1mm layer of castor sugar over the top of each slice of french toast.
  8. Use a blow torch to melt the sugar into a golden crackly caramel.
  9. Alternatively, set the oven to grill on the highest setting, then grill the french toast until the sugar has bruléed- keep a close eye on them to prevent them from burning.
  10. Allow to cool then serve with whipped cream.
