This crispy oven chip recipe is one of the easiest ways to make chips that turn out perfectly every time! You can play with the ingredients and quantities to suit the occasion (big snack vs a side for dinner) with no fear of messing up.
To make these chips, you will need to wash, peel and slice the potatoes into chunks, parboil in very salty water, and bake until golden, crispy and crunchy. This is a no-recipe recipe, as you can vary the quantities and cooking times to get the perfect result you’re after. Simply parboil, roast, and top with your favourite toppings and you’re in business!

Ingredients
- 800g potatoes
- 2 cloves garlic
- 1 lemon, zested
- 1 tsp oregano, Greek or regular
- feta
Instructions
- Preheat the oven to 200 degrees C.
- Wash, peel and cut the potatoes into chunky chips (roughly 1cm wide batons).
- Cover the potatoes in cold water. Add a hefty pinch of salt (the water should be as salty as seawater) and boil until the potatoes are softened, but still holding their shape, about 5-7 minutes. To test if the potatoes are ready, squeeze one gently. If it gives way and breaks easily but does not completely lose its shape, the potatoes are ready.
- Remove from the heat, drain the potatoes and allow them to steam dry in the colander.
- Place the dried potatoes onto an oiled baking tray in an even and well-spaced layer, along with two garlic cloves. Drizzle the potatoes and garlic cloves liberally with oil and roast them at 200 degrees C, turning halfway, until golden brown and crispy. This should take roughly 30 minutes. Five minutes before the chips have finished roasting, sprinkle over the chopped oregano.
- Season the chips to taste, then transfer to plates or trays lined with kitchen towel to drain any excess oil.
- To plate, place the chips onto a serving platter and top with feta, more oregano and fresh lemon zest. If using, you can smash the garlic cloves and toss through the chips, or mix with some mayonnaise to create a dipping sauce for the chips.
