Can I use chicken breasts instead of thighs?

Absolutely! However, keep in mind that chicken breasts may cook faster, and tend to dry out quicker, than thighs, so be sure to adjust the cooking time accordingly.. Try buy skin on chicken breasts which will help keep the meat moist (plus who can resist crispy chicken skin)

Description

Savour the fusion of smoky chipotle and sweet pineapple with my quick Chipotle and Pineapple Chicken. Crispy, seasoned thighs meet a flavorful sauce served with zesty red onion pickle. Impressively easy and ready in just 45 minutes.

 


Ingredients

  • 1/2 tsp cumin seeds
  • 1/2 tsp coriander seeds
  • 2 shallots, or 1 brown onion peeled and thinly sliced
  • 2 cloves garlic
  • 3 tbsp chipotle paste
  • 1 orange (zest and juice)
  • 1/2 pineapple (about 350g), peeled and cut into bite-sized chunks
  • 5 chicken thighs

Garnishing and serving:

  • 1/2 red onion
  • 1 lime
  • Handful of fresh coriander
  • Rice or root vegetable mash of choice

Instructions

  1. Preheat your oven to 190°C.
  2. Add a drizzle of oil to your dish and add the shallots. Cook the shallots until they brown slightly and become jammy, about 8-10 minutes.
  3. Grate the garlic into the pan, then add the chipotle paste. Cook for about 2-3 minutes.
  4. Zest the orange into the sauce and squeeze in the juice. Stir to combine. Season the sauce gently with salt and pepper to taste. Keep in mind that the seasoned chicken will introduce more salt into the dish, so use a lighter touch here.
  5. Rub the chicken thighs with olive oil, salt, and pepper. Nestle the chicken into the dish, skin side up and arrange the pineapple chunks around the empty spaces.
  6. Place the dish into the oven and roast for 35-40 minutes, or until the chicken is cooked through and the skin is crispy.
  7. While the chicken cooks, make your easy red onion pickle. Thinly slice the red onion and place it into a bowl. Squeeze lime juice over the onions, and toss them with salt and pepper. Toss 2 more times while the chicken cooks, allowing the onion to pickle.
  8. Remove the chicken from the oven, and garnish with pickled red onion and fresh coriander. Serve immediately with your favourite side.

  1. How is this supposed to cook at 190 for only 40 minutes? My timer just went off and as expected the chicken is not close to done?
