Mascarpone cream, pumpkin puree, and warming autumn spices bring the nostalgia factor to my Pumpkin Spice Latte Tiramisu. Luscious, creamy, and dusted with cocoa this is definitely more satisfying than simply sipping on your Starbucks.
Ingredients
For the Cream
- 3 large egg yolks
- 30g sugar for the eggs
- 50g sugar for the cream
- 120ml double cream
- 150g mascarpone
- 120g Pumpkin puree
- 1tsp mixed spice
- large pinch of salt
For the Assembly
- 3/4 cup of good espresso or very strong coffee
- 1tbsp unsweetened cocoa powder
- 12 ladyfingers
- chocolate, for shaving (optional)
Instructions
- Take the pumpkin puree, and put it in a pot on low heat. Add the mixed spice and cinnamon and combine. Cook for approx. 3-5 minutes on low heat, until thick and sticky with all the excess water cooked out. Set aside.
- Add water to a pot, bring to a rolling simmer and place a clean metal or ceramic bowl on top (a bain-marie). Make sure the bowl is not touching the water.
- Add egg the yolks, and 30g of the sugar, and whip until a pale, light, and fluffy consistency. This will take about 3-5 minutes. A slight ribbon should fall from the beater when lifted from the bowl. Fold the egg mix into the pumpkin puree and set aside.
- In a medium-sized bowl, whip cream and 50g sugar, until it thickens to create soft peaks. Add the mascarpone and fold the creams together until you achieve a smooth, spreadable mixture with medium peaks.
- Gently fold the mascarpone mixture into the egg mixture, until well combined.
- Pour the coffee into a suitably sized shallow bowl.
- One at a time, quickly dunk the ladyfingers into the coffee to avoid them falling apart, and place them into the base your serving glasses or ramekins. You may need to break them into smaller pieces to fit your serving dish. Repeat until all the serving glasses/ramekins have a layer of coffee-soaked lady fingers on the base.
- Divide the pumpkin-spiced mascarpone mix between your 4 serving glasses.
- Place in the fridge, and allow to set for 2-4 hours.
- Once ready to serve, dust the tops with cocoa powder and serve immediately.
