Summer Lemon Orzo

Here at the Culinary Cartel, we absolutely love orzo. It’s the perfect dish for any season and can be adapted in so many ways. Orzo and lemon is a classic combination, and for good reason too! The creamy and soft texture of orzo pairs beautifully with citrus flavours. 

Orzo is the ultimate one-pot dish and is an almost guaranteed crowd-pleaser. Creamy and light at the same time, orzo is the ideal dish to serve in the summer months and has quickly become one of my go-to weeknight dinners. 

This yummy lemony pasta dish requires only 7 ingredients and cooks up in 15 minutes or less. It’s a one-pan dish so you’ll avoid dirtying up multiple pans. Lunch or dinner couldn’t be simpler. Let’s get cooking!

What is orzo?

Orzo is a delicious Italian ‘pasta rice’ prepared from wholewheat, white or whole-grain flour, as well as semolina flour. It is delicious in soups or salads or prepared as a pasta dish. 

Can I prepare the lemon orzo ahead of time?

Absolutely! You can keep leftovers or pre-prepared orzo in an airtight container in the fridge for up to a week. The flavour will only improve over time.

Can I make this vegan?

This orzo dish is vegan! You can add non-dairy feta for extra creaminess, or leave it out altogether.

Ingredients

Units
  • 1 cup orzo
  • 1 tbsp olive oil
  • 2 garlic cloves
  • 450ml veg stock (from granules)
  • pinch of salt
  • zest of 1 lemon
  • 5g flat leaf parsley
  • tenderstem tips
  • 150g peas
  • feta or non-dairy feta (optional)

Instructions

  1. Place your pan on medium heat. Once the pan has heated up, pour the oil in.
  2. Add the orzo and stir so until coated in oil and it begins to toast.
  3. Grate the garlic into the pan and stir again.
  4. When the orzo begins to take on some colour add in the stock and place the lid on the pan.
  5. Leave for 5 minutes. Stir occasionally to ensure the orzo doesn’t stick to the bottom of the pan.
  6. After 5 minutes, and once the orzo has absorbed most of the liquid, add in the peas and the tender stem broccoli and steam by placing the lid back on the pan for 3 minutes, until the pasta and veggies are al dente.
  7. Allow to cool slightly, then add in the wild rocket, sprinkle over the (optional) feta and serve. Enjoy!
