Mash may just be the ultimate comfort food. It’s nearly perfect in its simplest form, so how can it be improved, I hear you ask?

Enter herb-infused mash. This is a deliciously creamy and traditional mash, taken to the next level with herb-infused milk. The addition of the herb infusion adds another dimension of deliciousness – and they say you can’t improve on perfection!

What makes a great mash?

To make your mash the best mash it can be, you need a few essentials:

Potatoes

Use the right potatoes! Choose a variety intended for boiling or mashing, such as Russets, Desiree or Maris Piper.

Butter

Fresh, creamy butter is essential to the perfect mash. Don’t be shy with the butter when making mashed potatoes – the fattiness of the butter will give it that smooth mouthfeel you’re after.

Milk or cream

Adding milk or cream adds moisture and helps to smooth the texture of the mash.

Salt and pepper

Season, season, season! Never be shy with your seasonings – potatoes love salt!

This mash recipe is super easy, super tasty, and requires a minimal ingredient list and time investment. To make the herb-infused mash, you need only 6 basic ingredients and an hour or less of active prep and cook time.

Description

We have been loving recipes from Hulu’s The Bear – this herb-infused creamy mash is no exception! Herbaceous, fluffy and creamy, this goes amazingly with The Bear’s chicken piccata recipe.

Ingredients

Units
  • 4 large potatoes (about 800g)
  • Salt
  • 30g butter
  • 110ml milk

Bouquet garni

  • 2 bay leaves
  • a small bunch of thyme
  • 3 sprigs of rosemary

Instructions

  1. Make the bouquet garni – tie the herbs together with some string or twine.
  2. Add the milk to a saucepan or medium-low heat to warm. Add the bouquet garni and infuse for a minimum of 15 minutes, up to 1 hour.
  3. Wash the potatoes well, lightly scrubbing to remove any grit. Then prick them lightly all over with a fork.
  4. If you want to cut down on cooking time in the air fryer, place the potatoes into the microwave and cook for 6 minutes on high.
  5. Prep a metal roasting tray for your air fryer, or simply remove the grate so your potatoes have a flat surface to cook on.
  6. Place a small mound of salt on the roasting tray, one for each potato to rest comfortably on. The salt bed will absorb excess moisture in the potatoes, yielding beautifully fluffy results once cooked.
  7. Heat the air fryer to 190°C.
  8. If you use the microwave: Cook for 20-30 mins. depending on the size of your potatoes, until cooked through, and easily pierced with a knife. When the centre of the potato is pierced with a thermometer it should ideally read  95-100°C, which is the sweet spot for light and fluffy potatoes.
  9. Air fryer only: Cook for 45-60 minutes, depending on the size of your potatoes, until cooked through, and easily pierced with a knife. When the centre of the potato is pierced with a thermometer it should ideally read  95-100°C, which is the sweet spot for light and fluffy potatoes.
  10. Remove the potatoes and mash them – ideally using a potato ricer. This will yield the fluffiest and smoothest result.
  11. Add the herb-infused milk along with the butter, stir, season, and serve hot. Enjoy!

  1. This recipe was perfect! My boyfriend practically licked his plate clean. Thanks so much for sharing.

  2. In a later episode, the preparation for mashed potatoes was apparently changed. The potatoes were cooked with their skins in the oven, Tina had problems peeling the potatoes afterwards. Does anyone have the recipe for this?
