Feeling peckish? This air-fried olive delight is my new ultimate bar snack. Crunchy, salty, and moreish as anything, air-fried olives are everything you want in a salty snack or appetiser. Served with a creamy and herbaceous spring onion yoghurt dip, these olives are simply addictive! 

I love serving them as a snack alongside a frosty, cold beer on a hot day, but they are equally as good served as a fun starter for a dinner party. The creamy yoghurt dip contrasted against the salty, crunchy exterior of the olive bites is simply divine! 

This recipe is incredibly quick and easy to make and requires only a limited ingredient list. 

The key ingredients for air-fried crispy olives

Olives

Use your favourite pitted olives to make this recipe. I’ve used pitted green olives here, but any variety will work – black, kalamata, pickled, brined, spicy – the sky’s the limit! 

Feta

Get the best feta cheese you can. I like to use plain creamy and crumbly Greek feta in this recipe, but you can use flavoured/seasoned feta or feta-style cheeses if you prefer. 

Panko breadcrumbs

Coating and dredging the olives will result in a crispy exterior; for the ultimate crispy and crunchy air-fried olive, you need panko. Panko breadcrumbs are incredibly light and will help anything you coat in them to fry up perfectly crispy and golden. 

Preparing this dish could not be simpler – simply stuff and coat the olives, pop them into the air fryer, make the dipping sauce, and serve! You will need only 9 basic ingredients to make this dish, and it comes together in under 15 minutes.

Why air fry the olives? Can I make them in the oven instead?

This dish is wonderfully light and crispy, with none of the heavy fattiness that deep-frying can bring. This dish can be made in the oven if you don’t have an air fryer. Simply bake the olives in a preheated oven at 220 degrees for 20-25 minutes, or until golden and crispy. 

What can I serve this with?

This dish is marvellous on its own; however, if you’re in the mood for a bit of extra deliciousness, you can serve some toasted flatbreads on the side to dip along with your olives. My yoghurt flatbread is always a winner!

Description

Ingredients

Units
  • 150g pitted green olives
  • 3050g feta cheese, sliced into thin batons

Flour dredge

  • 100g flour
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp fine salt and pepper (or 2 tsp of your favourite seasoning mix, along with salt to taste)

Egg wash

  • 1 egg
  • 1 tbsp water
  • 2/3 cup/60g panko breadcrumbs

Dipping sauce

  • 1/3 cup greek yoghurt
  • 1 spring onion
  • salt and pepper to taste

Instructions

  1. Stuff thin batons of the cut feta into the centre of the pitted olives.
  2. In one bowl of flour add the seasonings, salt and pepper. In a bowl, whisk the egg with the water until combined. To a third bowl add the panko.
  3. Toss the olives into the flour, then into the egg, then back into the flour and again in the egg. Finally, add the double-dipped olives to the panko and toss to coat evenly.
  4. Place into the air fryer, spritz with olive oil spray and cook at 195C for 5-8 minutes or until golden brown
  5. Make the yoghurt dipping sauce: finely chop spring onions, then combine ingredients.
  6. Remove from the fryer and serve with the spring onion yoghurt dip.
