Coconut Oats with Easy Berry Chia Jam

Lush, silky, creamy, these coconut oats are everything you want for breakfast and more, especially topped with a hefty spoonful of sticky berry chia jam!

Oatmeal can be divisive. I find the people who tend not to enjoy it have not had it cooked to perfection. 

These oats have a proper fan base, and it’s easy to see why. Luxurious, creamy, and silky smooth, they are the gold standard for oats. 

With a little pre-planning the night before, which takes just 2 minutes, these oats will cook on the stove or microwave in 10 minutes and need only 3 simple ingredients to achieve their silky smooth and creamy texture. Usually to achieve the same lush texture you would need to cook them on low for 40 minutes, stirring constantly (who has time for this? No one!). My simple hack of pre-soaking the oats the night before leaves the raw oats plump and saturated, allowing them to cook in less than 10 minutes! Total game changer. 

Serve these oats with a drizzle of coconut cream and a sweetener of your choice (optional). You can also go ALL OUT and add my 5 Minute Berry & Chia Jam. It’s low in sugar, vegan, and subtly spiced with vanilla; complimenting this bowl perfectly.

This recipe goes out to my friend Quint, a proper oatmeal and veganism skeptic. After inhaling 3 large bowls and becoming slightly upset when there was none left for a further afternoon snack, I think it’s safe to say that I have converted him to oatmeal, and breakfasts sans bacon.

What other toppings can I add to my oats?

These oats are lovely on their own with a little brown sugar or honey. You can also add roasted fruits (I love this recipe), seeds, nuts, toasted coconut flakes or chocolate. The options are endless- get creative.

Ingredients

Units
  • 1 1/2 cups oats
  • 2 cups water (and more as needed for cooking)
  • 1 1/2 cups coconut milk
  • salt to taste
  • sweetener of choice to taste (optional)

For serving


Instructions

  1. Place the oats, water, and coconut milk into a container the night before, and leave them to soak overnight (this is the secret to the most creamy, dreamy oats). If you don’t have this much time, leave them to soak for at least 1 hour, and warm the coconut cream and water before adding it.
  2. When ready to cook, add the oats to a pot and turn the heat to medium. Add more water as needed to loosen the oats, then cook for 7 minutes until creamy. Add more water as needed while cooking. The oats should be loose and soft (like risotto), spread out easily when spooned into a bowl, and not hold their shape. If the consistency is too thick add more water.
  3. Once the oats are cooked, season the oats to taste with salt and sweetener. Spoon into bowls and top with more coconut cream and a swirl of 5-minute jam.
