What’s your favourite rainy day food? To me, the perfect rainy day food is a simple and creamy roasted tomato soup. This recipe is truly one of my ultimate comfort foods and is utterly irresistible served with my Ultimate Cheese Toastie.

To make it, you’ll only need 4 basic ingredients and 35 minutes. As an added bonus, this recipe is vegan!
Budget-friendly, delicious and easy
This recipe is the perfect way to use up those tomatoes that have been lurking at the bottom of your fridge and relies solely on grocery staples – nothing complicated or difficult to get your hands on.
Just set it and forget it
This recipe makes your air fryer do all of the hard work – all you’ve got to do is pop your veggies into the air fryer, (no need to preheat it) leave them to roast for 30 minutes, and then blend and serve. Easy as that!

Can I make this in the oven if I don’t have an air fryer?
Absolutely! To make the tomato soup using an oven, preheat your oven to 190 degrees C. Then bake at 190 for about 40 minutes. Every oven is different, so just keep an eye on it while it’s roasting. The garlic should be gooey, caramelised and soft, and the tomatoes should be cooked through and blistered.
Can I make this vegan?
The base recipe is vegan and you can add a vegan pesto if you like.

Ingredients
- 1kg fresh, whole tomatoes
- 200 – 300ml vegetable stock
- 1 whole garlic
- a small handful of basil, to blend
- salt and pepper
- oil
- basil pesto (optional)
Instructions
- Cut the top off of a whole garlic bulb, drizzle liberally with oil and wrap in foil.
- Place the garlic, along with your fresh whole tomatoes into the air fryer basket.
- Air fry at 175 degrees C for 15-20 minutes, or until the garlic is caramelised and gooey, and the tomatoes are blistered and softened.
- Squeeze the roasted garlic from its papery skin into a medium pot and add in the roasted tomatoes. Sprinkle over the basil and pour in the vegetable stock, then blend until smooth.
- Season with salt and pepper to taste, and swirl through some pesto (if using). Enjoy with a gooey, melty cheese toastie!
