Description

Ingredients

Units
  • 500g summer tomatoes
  • 1/4 cup olive oil
  • 2 cloves garlic
  • 3 slices of bread
  • Salt and pepper to taste
  • 300g cottage cheese
  • 20g (about 3 bunches) chives, finely sliced

Instructions

  1. Wash the tomatoes and slice 1 clove of garlic.
  2. Place the tomatoes and sliced garlic in a roasting dish. Add the olive oil and season with salt and pepper.
  3. Roast the tomatoes:
    Air Fryer: Set to 160°C and roast for 15-20 minutes. No need to preheat.
    Oven: Preheat to 180°C and roast for 20 minutes.
  4. Toast the bread slices.
  5. Rub each piece of toast with the remaining garlic clove.
  6. Slice the chives, setting aside some for garnish.
  7. Mix the cottage cheese with salt, pepper, and the sliced chives.
  8. Place the toast on a plate and drizzle with a little of the tomato olive oil.
  9. Spoon the cottage cheese mixture onto each piece of toast.
  10. Top with the roasted tomatoes, their roasting juices and garlic.
  11. Garnish with the reserved chives. Serve immediately and enjoy!
