What’s kombucha I hear you asking? Kombucha is a slightly fermented tea (green tea in this case), filled with antioxidants and probiotics, with a taste somewhat between apple cider and champagne and, due to the fermenting process, it’s naturally low in sugar.

Kombucha is thought to have originated in the far east around 2000 years ago, and purportedly boasts an array of health benefits, including boosting the immune system, improving energy and lowering cholesterol. My favourite part is that it comes in a variety of flavours making it perfect to sub for sugar rich mixers in cocktails and as it aids in digestion, it’s perfect to pair with an indulgent meal.

Can I make this without alcohol?

For a refreshing (and alcohol-free) version, simply leave out the Reposado, and top up with soda water, and perhaps a dash of honey for that honey flavour.

Can I make this with other spirits?

The tequila makes this a “Mexican” mule. Sub vodka for the tequila to make it a Moscow Mule.

My Mexican Mule is a delightful, zingy twist on a Moscow Mule – just in time for the festive season!


  • 340ml Happy Culture Lemon and Ginger Kombucha
  • Leonista Honey Reposado
  • Crushed Ice
  • Lime wedge


  1. Fill your tumbler or copper mule mug with crushed ice.
  2. Squeeze over the lime wedge and add the lime wedge to the tumbler.
  3. Add 1 shot of Leonista Honey Reposado (about 40ml), top up with Happy Culture Lemon and Ginger to taste.
