I hate it when the weather can’t make up its mind. Are we in spring or….?

Regardless, the hot, cold, windy thing that’s been going on in Cape Town is wrecking havoc on my skin. Ok, so maybe being a private chef and food stylist, and racing to meet consulting deadlines could also have something to do with it. Luckily all the delicious summer fruit is starting to come in, so I will be spending my Tuesday morning enjoying a super size bowl of coconut pineapple goodness. Needing just 5 ingredients, and blending up in less than 5 minutes it’s like a Pina Colada, without the next day regret filled hangover, and a few healthier ingredient swaps keep this low in sugar and packed with vitamins.

Pineapples are antioxidant rich, good for inflammation and full of vitamins, while coconut milk provides your body with lots of healthy fats, essential for nourishing skin from the inside out.

Fun fact, did you know pineapples are actually many individual berries that fused together around a central core?

My one gripe with delicious smoothie bowls is the amount of sugar you end up consuming. This is why I have added the option in to replace some of the frozen banana with steamed and frozen cauliflower- you can use leftovers or grab a few frozen florets from the shops for future use. I promise you wont taste it, and the your smoothie just got lower in sugar and higher in vitamin C

Can I replace the banana for another ingredient?

Frozen mango is a great alternative to banana. While not tested in this recipe we hear silken tofu can be a great substitution for banana in smoothie and smoothie bowl recipes.

Nourish your skin and body with this ultra restorative vegan piña colada power smoothie bowl. Packed with chia seeds, fruit and veg to nourish your sun battered summer skin.


Ingredients

Units
  • 1 large banana, chopped into chunks (about 150g)
  • 200g pineapple, chopped into chunks
  • 100g steamed cauliflower (or replace with more banana)
  • 1/4 cup coconut cream
  • 2 Tbsp chia seeds (optional)

Toppings

  • Be creative here and use whatever works for you. I like toasted coconut, dragon fruit, chia, berries, mango, granola, freeze dried fruit and nuts.

Instructions

  1. The night before, place the banana chunks, pineapple, and cauliflower into the freezer. You can skip this step but your smoothie will be runny and any toppings placed on top will sink. Measure out your coconut milk and add your chia to the milk to soak overnight.
  2. The next day, throw all your ingredients, except your toppings into a high speed blender, and blend on high. You may need to stop the machine once or twice to stir the ingredients around and help them blend. If your blender struggles, add a bit more coconut milk.
  3. Spoon the mixture into a bowl, scatter over your toppings and dig in.
  4. For those looking to go all out and do it for the ‘gram, add a mango rose! Here’s a helpful video.
